Spiced Kabocha Bread

Ingredients

  • 2 x Kabotcha Squash,
  • approx. 300g
  • 220 Plain Flour
  • 2 eggs
  • 2 tsp ground ginger
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp ground allspice
  • 1 tsp bicarbonate of soda
  • 110g brown sugar
  • 100ml vegetable oil
  • 100ml orange juice
  • ½ tsp salt

Directions

  1. Preheat oven to 180c.
  2. Slice the Kabotcha squash in half and scoop out the seeds and pulp. Place the squash on a baking tray, skin side up and transfer to the oven. Roast for 40 minutes.
  3. Remove the roast squash from the oven and scoop out the soft flesh into a food processor/blender. Add the oil, orange juice and eggs then process into a smooth puree. Place to one side.
  4. In a large mixing bowl, combine the flour, salt, bicarbonate of soda, spices, and sugar. Pour the puree mix into the bowl and stir everything together with a spoon or spatula.
  5. Grab a 9x5 loaf tin and rub the inside with a piece of butter or oil. Transfer the mixture into the tin then place in the middle shelf of the oven and bake for 60 minutes at 180c. Once cooked, remove from oven and turn out onto a cooling tray.
  6. Serve hot with a knob of butter and enjoy.
