Smokey BBQ Corn Ribs
Smokey BBQ Corn Ribs & Spicy Mayo Dip

Ingredients
- 2 whole corn cobs
- 2 tbsp Olive Oil
- 1 Lime, juice of Fresh Coriander, finely chopped
- 3 tbsp Mayonnaise
- 2 Garlic Cloves, minced
Smokey BBQ Rub
- 4 tsp smoked paprika
- 4 tbsp sweet paprika
- 1 tbsp salt
- 3 tbsp brown sugar
- 1 tsp black pepper
- 1 tbsp garlic powder
- 2 tsp onion powder
Method
To make the BBQ rub, place the ingredients in a container, seal with a lid and shake.
Cut the cobs lengthways into 4 portions, coat with Olive Oil and sprinkle 2-3 tbsp of the homemade BBQ rub.
Preheat the AirFryer to 180c, using the air fry setting.
Place the corn “ribs” in the air fryer basket and cook for 15 minutes.If you don’t have an air fryer, simply preheat oven to 180c and cook for 25 minutes.
Add mayonnaise, lime juice and minced garlic then whip it together with a fork. Spoon into a small dish and add a pinch of chopped coriander.
When the corn “ribs” have cooked, remove from the air fryer and garnish with chopped coriander. -
